Try to stay locked onto the enemy (R3 stick). This tip helped me but idk if itll fit your play style but play more aggressive and close. It seems your playing distance and being defensive. While being defensive and staying alive is good, you gotta damage the boss to beat it, and in my experience, especially end game bosses, they seem to punish you if you keep distance for too long by unleashing very aggressive unblockable attacks.
